Here is a classic recipe for Ukrainian borscht:
Ingredients:
500 g beef, diced
2 potatoes, diced
1 beetroot, diced
1 carrot, diced
1 onion, finely chopped
1/4 cabbage, cut into thin strips
2 tbsp tomato paste
2-3 tbsp vegetable oil
2 liters of water or broth
2-3 bay leaves
4-5 grains of black pepper
Salt and pepper to taste
Greens (dill, parsley) for decoration
Sour cream for serving
Steps:
Prepare the meat:
In a large saucepan, heat the vegetable oil and fry the meat until golden brown.
Add the onion and fry until transparent.
Add Vegetables:
Add potatoes, beets, carrots to the pot. Stir and fry for a few minutes.
Add the tomato paste and mix thoroughly.
Top Up the Water and Cook:
Add water or broth to the pan. Bring to a boil and reduce the heat. Add bay leaves, black pepper, salt and pepper to taste.
Cover the pan with a lid and cook over low heat for about 40-50 minutes, until the meat and vegetables are soft and cooked.
Add The Cabbage:
Add the chopped cabbage and cook for another 10-15 minutes, until the cabbage is soft, but still retains its freshness.
Serve:
Check and adjust the taste, add more salt and pepper if necessary.
Serve the borscht hot, sprinkled with fresh herbs and with a spoonful of sour cream on top.
